Reinvented American fare with a KC flare
Welcome to The Stilwell, located inside Loews Kansas City Hotel, in the heart of downtown. The Stilwell name is a nod to The Stilwell Oyster Car, the iconic Pullman car that delivered oysters to Kansas City’s City Market in the late 1800s.
Chef Patrick LeBeau’s menu features items for the simplest of palates and culinary thrill seekers alike. At the Stilwell you will find dishes such as his take on a Clam “Chowder”, Roasted Pork Belly with a house-made bbq sauce featuring local distillery Tom’s Town Bourbon, and a decadent Apple Cake served with hand crafted ice cream with Hemme Brothers Cheddar, paying homage to his home state of New York.
Décor at The Stilwell is modernly rustic and elegant, featuring an open concept with direct views into the kitchen and of the Kansas City skyline. The restaurant also has two private rooms to accommodate large parties or those looking for private dining options.
About Chef Patrick LeBeau
Patrick LeBeau, Chef de Cuisine, is at the culinary helm for Loews Kansas City Hotel’s restaurants. He is known for bringing local flavors to the forefront of his menus, and has done just that in Kansas City. Working with local partners and farms to highlight the best that Kansas City has to offer right here at The Stilwell, and Bar Stilwell.
Chef LeBeau, a New York native, started his passion for cooking at a young age and studied at the Culinary Institute of America in Hyde Park, New York. After a few years growing his skills in the northeast of the country, LeBeau moved to Chicago and quickly grew to become Chef de Cuisine of NoMI Restaurant.
